Meal Prep Monday!

Happy Canadian Civic Holiday Day 😜

So, Happy NB Day for you NB-ers, Natal Day for you NS and PEIers, and Happy Gander Day to my Gander folk! 

For me, that meant some extra time to do some meal prep for this week. I started out with some Apple Banana Quinoa Cups. These are a great way to have some complete protein in the morning, and a serving-ish of fruit. Their compact size makes them appropriate for grab and go, or I’d say they would also be good broken apart and warmed with milk.

Your first step will be to prepare the quinoa:

1/2 c quinoa

3/4 c water

Combine them in a small pot, bring it to a boil, cover and cook for 12 minutes. 
In the meantime, start out with:

1/4 c of butter, melted

1/4 c of yogurt

3 small bananas, mashed (should equal about a cup)

1/2 c milk

1 heaping tablespoon-1/4 c apricot jelly

1 tsp vanilla

Mix them together in a large bowl, until mostly smooth. The bananas will still make it a bit lumpy.
Sprinkle the quinoa over the wet ingredients.
Next sprinkle over the wet-quinoa mixture:

2 and 1/2 c quick oats

1 tsp cinnamon
Stir together until combined.
Chop:

1 apple into small pieces
Fold into the quinoa mixture.
I like to use an ice cream scoop to scoop the mixture into a muffin pan lined with parchment paper muffin cups (which are the bomb.com btw). 

You should get about 12!

Bake on 375 for 20 mins. My oven runs a little hot, so yours might need a couple minutes longer.

These should freeze just fine, and can be enjoyed as a yummy whole foods breakfast with a cup of tea 🙂
